I hope you’re hungry today! I’m joining about 50 other bloggers as we come together to share our favorite go-to Easy Weeknight Meal Ideas! We’re all busy, but we still have to eat, right? We’re putting a whole new spin on the term “fast food”!
One of my family’s favorite easy weeknight meals is Cowboy Casserole, and I always make a double batch for leftovers!
I’ve adapted this recipe from Betty Crocker. It hits our tables and fills our bellies at least two or three times each month. I almost always have all the ingredients handy anyway, so I can just mix it up, pop it in the oven, and 20 minutes later, dinner is on the table!
The Filling:
To make the filling, you’ll need 2 pounds of ground beef, 2 16-oz cans of baked beans (we like the maple flavor), and 1 cup of BBQ sauce.
Brown the meat, and drain. Then add the baked beans and BBQ sauce. Mix it all together and let it simmer for about five minutes, until it comes to a low boil.
I’d eat it as-is, but it only gets better from here!
The Topping:
In a large bowl, combine 4 cups Bisquick (give or take), 1 1/3 cups milk, and 2 Tbsp butter. Reserve the Cheddar for later.
I usually mix all this up while my meat is browning. That is, unless I’m emptying or reloading the dishwasher, feeding the dogs, or running down to the basement to start a load of laundry. (Can you relate?)
Ok, take your meat mixture and pour it into a lightly greased 13×9 baking dish. Smooth it out with a spoon.
Drop spoonfuls of the Bisquick mixture on top of the meat mixture.
Pop that bad boy in a 425° oven for 18-22 minutes until the biscuits on top are brown. Sprinkle with cheddar cheese, then devour.
So good!
