Rainbow Cupcakes {Christmas Edition}

This past weekend, we went to a Christmas drop-in and everyone was asked to bring a dish.  Marley didn’t hesitate for a second on what she wanted to bring – Rainbow Cupcakes!
We made real rainbow cupcakes a couple years ago for one of her class parties, and it’s super easy (super messy, too).  For this party, we decided to make a Christmas version of them!
We love Betty Crocker Super Moist cake mix and Betty Crocker Rich & Creamy cream cheese icing.  Dee-lish!  We also used candy cake decorations and Christmas cupcake liners.  Throw in some red and green food coloring, and you’re ready to go!

After you make the cake batter according to package directions, just divide your batter into 3 bowls.  (If you make regular rainbow cupcakes, you would make 6 or 7 different colors, therefore you would need to divide your batter into 6 or 7 different bowls.)

Add a few drops of food coloring and mix – continue adding until you reach the desired shade.

Now that you have 3 beautiful Christmas shades of batter – red, green, and white – you can begin to make your cupcakes!

It’s so easy.  Just pour a little bit of each color into your cupcakes liners and bake as usual.

They are so pretty when they are completed!  You can do the same thing for the icing if you want different colors.  We didn’t have time for all that – just stuck that candy topper on there and off we went to party!

Fortunately, we had some left over so I got to eat one (or two….) myself!  They are as delicious as they are festive!
