Ok, maybe that post title is a bit exaggerated, but not much. I love fresh fruit and vegetables, and the summer months are just ripe with freshness. Skip the oven and treat yourself to The Best Summer Salad In The History of Ever.
This salad is so delicious y’all, and filling, too! I promise you won’t leave the table hungry!
Whether you pick up fresh veggies and fruit from the farmer’s market or the grocery store, this summer salad is a treat!
What you need:
- Blueberries
- Strawberries
- Red and green apples
- Spring lettuce mix
- Heart of Romaine
- Bleu cheese crumbles
- Dried cranberries
- Walnuts
- Grilled chicken
- Pomegranate viniagrette dressing
Mouth watering yet?
Wash all the fruit, then cut the apples into small cubes and halve or quarter the strawberries. I had some big suckers in my pint so I had to quarter those bad boys! Mix the spring lettuce mix and hearts of Romaine in a big bowl, then top with all the other ingredients. Sprinkle bleu cheese, cranberries, and walnuts on top, and drizzle with pomegranate dressing.
Then….DEVOUR!
Want to make it the “cheater” way that I did? I bought pre-cooked and sliced grilled chicken! It was in a bag in Publix in the deli meat section. So. Good. And super easy, too – no cooking involved!
I’m telling you, the combination of the bleu cheese with the sweetness of the pomegranate is just divine!

- Strawberries – halved or quartered
- Bluberries
- Green and red apples – cubed
- Bleu cheese crumbles
- Dried cranberries
- Walnuts
- Grilled chicken – cut into strips
- Pomegranate viniagrette dressing
- Mix the spring salad mix and Romaine lettuce in a big bowl.
- Add strips of grilled chicken.
- Add blueberries, strawberries, and apples.
- Top with bleu cheese crumbles, cranberries, and walnuts.
- Drizzle with pomegranate viniagrette and enjoy!
